For me, breakfast is my least favorite meal of the day...unless my husband is home cooking up something yummy or I'm at a diner eating delicious hash browns. Anyways, I know it's important to start the day off in a healthy, nutritious way so I always try to make sure my kids are served something good.
On the weekends we make big breakfasts consisting of some combination of eggs, potatoes, sausage or bacon, pancakes, toast, etc., but I'm too busy drinking coffee during the week to fly solo in the kitchen, so breakfast is much quicker. Even if I just give my toddler some Eggos, I always give him fruit or yogurt, and sometimes turkey sausage.
My 10 month old used to go down for his first nap pretty early, but now that we've been able to push it back a bit, he sometimes joins us for breakfast. I started him with just fruit, but have now been fueling him up with oatmeal and he loves it...like open his mouth to eat my hand because I'm not fast enough and bang on his tray loves it.
Here is a quick recipe for delicious baby approved oatmeal:
Banana-Apple Oatmeal
1. Chop up 1/2 cup oats in food processor to desired oat size.
2. Add 3/4-1 cup of water and heat in microwave for 1.5-2 minutes.
* I cooked the oatmeal differently this time by following this: add a small amount water that will be enough to just soften the oats and heat in microwave for 20 [+/-] seconds. It turned out fine, just more condensed.
3. Chop/puree your banana [1] and pre cooked apple [1/2 apple]. I like to use frozen bananas.
4. Once your fruit is chopped to the thickness you want, thoroughly blend in your oat mixture.
5. Freeze in small batches, put in fridge for next day use, or serve right away.
*This batch I used the Infantino Squeeze Station to make pouches that I froze for later.
There are so many yummy flavors and combinations you can make to add into oatmeal for your baby such as:

Blueberry
Strawberry

Pumpkin

Today, we finished up our banana oatmeal. I had this meal fresh and after serving to my baby over the weekend, I put the leftovers into a 4oz ball jar to use throughout the week. 1 banana and 1 serving of oats lasted us 3 mornings.
